Poached giant shrimp emerging from a radicchio cup with slices of Avocado and Papaya. A sprinkling of jicama chips and a Honey-Lime-Cilantro dressing.








Grilled Duck Breast
Thinly sliced Grilled Duck Breast with Kumquat Demi Glace falling off a bed of julienned Endive, Dried Cranberries and Kumquat skins in a sweet rice vinegar dressing.
